Chicken Dinner Rolls

A simple, delicious lunchtime snack to pack in lunch boxes. Add lettuce, tomatoes and cucumbers to the rolls to increase vegetable intake. And if necessary make your life easier by using store bought dinner rolls/burger buns.

Ingredients

For 4 Person(s)

For the dough

  • 2 Cups flour
  • 1.5 tsp yeast
  • 2 tbsp sugar
  • 0.5 tsp salt
  • 0.5 Cups milk
  • 3 tbsp milk
  • 40 g butter
  • 2 egg yolk(s)

For the filling

  • 250 g boneless chicken, diced into small pieces
  • 2 clove(s) garlic, finely chopped
  • 1 large onion(s), thinly sliced
  • 1 tsp chilli powder
  • 0.5 tsp cumin powder
  • 0.5 tsp coriander powder
  • 0.5 tsp curry powder
  • 2 tbsp tomato ketchup
  • Salt, to taste
  • 4 tbsp oil

For assembling the bun

  • Thinly sliced lettuce
  • Mayonnaise

Directions

    Prepare the dough:
  1. Warm the butter and milk together just until the butter melts and the mixture is lukewarm in temperature.
  2. Add the yeast and sugar to the milk mix and set aside for 5 minutes.
  3. Into a bowl: add flour, salt, egg yolks and the yeast mix and knead well until a smooth dough is formed. ( 7-10 minutes in a standing mixture on medium speed or 12-15 minutes by hand)
  4. Once done, form the dough into a ball and place the dough in a bowl greased with some oil and cover the bowl with plastic wrap. Let it rest until the dough doubles in size. (approx. 1 hour)
  5. Once the dough has doubled in size, put it out on your work surface and deflate it. Sprinkle some flour over your work surface if necessary. Divide the dough into 4 equal parts.
  6. Lightly grease a baking dish with some butter and set aside.
  7. Form the 4 dough portions into the shape of balls. Place them on the baking dish with an inch or more distance between them.
  8. Cover the baking dish with plastic wrap and leave it in a nice warm place until it doubles in size again.
  9. Preheat the oven to 375 degrees.
  10. Once the dough balls have risen, place them in the oven and bake for about 20 minutes or until golden brown. Brush them with melted butter as soon as you take it out of the oven and let the buns cool down.
  11. Prepare the filling:
  12. In a pan, add oil and once heated add the garlic and onions and fry until they become slightly golden brown.
  13. Add all the spices and diced chicken and mix well. Let it cook until the chicken is done.
  14. Add salt to taste.
  15. Add the tomato ketchup and mix thoroughly.
  16. Remove from heat once the filling comes together.
  17. Assemble the dinner rolls:
  18. Cut the buns in half across.
  19. Apply mayonnaise inside the bottom half of the bun and layer with some thinly sliced lettuce.
  20. Top it with enough chicken filling and close with the top half.
