Spinach and cherry tomato Frittata

Whar is a frittata? It is an Italian breakfast dish, basically a crustless quiche. Served at room temperature, it can be made well ahead of time.In fact you could send it in a lunch box to school.  A frittata is not an omelette -  it is slow cooked slowly over low heat, whereas an omelette is cooked on high heat. 

Usually frittatas are baked in an oven, but they can be made on a stove top -  you will need a heavy based pan though. You can also try "baking"your frittata in your airfryer. 

Like quiches, frittatas can be used to clean out your fridge. You can throw anything you want in a frittata as long as the egg base recipe is followed. So jazz it up or not as you see fit.

Egg Custard

  • 5 eggs Large, room temperature
  • 1 tbsp Milk
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 0.5 tsp Red Chili flakes (or more if you like it hot)
  • 1 clove Garlic, minced
  • 1 tbsp Butter
  • 1 handful Chopped spinach
  • 1.5 cups Mozarella Cheese
  • 250 gms Cherry tomatoes
  • 1 tbsp Chopped spring onions


  1. 1- If using an oven preheat to 180 degrees C
  2. 2- Whish eggs, salt, pepper, red chili flakes and milk
  3. 3- Suate the garlic, wilt spinach leaves gently in olive oil.
  4. 4- I generally saute my cherry tomatoes as well
  5. 5- Remove a little less than half of the mixture
  6. 6- Add butter to the pan and swirl it around
  7. 7- Add 2/3 of the egg mixture and about half the cheese
  8. 8- Layer on the remaining egg mixture and layer again with the remaining spinach and tomato mixture. 
  9. 9- Add the balance cheese. 
  10. 9- Cook for 3 minutes till the sides are set and bake in an oven for 8 minutes till the cheese is melted and golden brown. 
  11. 10- Let is rest for a bit before serving. 
  12. 11- Serve with a fresh green salad or some suateed veg. 
  13. Garnish with green onions/ parsley

Recipe notes

To cook on a stove top -  cook for about 6 mins then flip and cook again. 

Make sure your pan is well oiled and heavy based - otherwise your firttata will stick.
