K's Beef and Vegetable Stew

This is a good dish to get some healthy root vegetables into your kids. 



For 4 Person(s)

  • 500 g Beef or Mutton, cubed
  • 2 Medium sized Sweet potatos, chopped
  • 1 Medium sized Onion, finely chopped
  • 1 Medium sized Carrot, peeled and cubed
  • 500 g Butter squash, cubed
  • 10 Black olives, halved
  • 1 tsp MA's minced garlic
  • 2 tbsp Pasta Roma herbed sauce
  • 1 handful Fresh thyme
  • 1 handful Fresh oregano
  • 0.5 cup Red wine (Ootional)


  1. Marinate the beef cubes in salt and pepper for about an hour.
  2. In a large, pot brown onion and garlic
  3. Add sweet potato, carrots, squash, and herbs, cook for a few minutes.
  4. Add beef cubes ,olives and sauce and red wine.
  5. Cover and cook for forty-five minutes, occasionally stirring so it does not stick to the bottom of the pan.

Recipe notes

This can be served with steamed rice or crispy garlic bread. We usually serve it over crispy garlic bread, as this is not a runny stew the consistency is quite thick. 

This can be made the day before and can be refrigerated for up to 3 days.
