Cheesy Scrambled Egg with Tomato & Spinach

  • 2 Large eggs
  • Shredded cheese
  • 1 handful Spinach
  • 1 Tomato, sliced
  • Pinch of salt
  • Tomato sauce (optional)


  1. Making the filling
    On medium heat gently scramble the eggs, adding pepper and Salt as required, Once the eggs become fluffy, include the diced tomatoes and shredded spinach into the scrambled eggs and stir. Add the cheese before taking the pan off the fire and mix well with the eggs.
  2. Making the Panini
    Spread the scrambled eisggs on to a slice of Sandwich bread or your preferred type of bread, add cheese if necessary, make sure not to overload the filling onto the bread, place another slice on top and close the Panini maker on the sandwich.
